Snappy Snickerdoodles













Ingredients:
2 1/2 Cups All-Purpose Flour
1 tsp. Baking Powder
1/4 tsp. Salt
1 1/2 Sticks Butter, softened
1 3/4 Cups Granulated Sugar
2 Eggs
1 tsp. Vanilla Extract
2 Tbsp. Ground Cinnamon

Directions:

1. Preheat oven to 350˚. Line two cookie sheets with parchment paper.

2. Whisk all dry ingredients in a medium bowl. Set aside.

3. Using electric mixer, in a large bowl, beat butter and 1 1/2 cups of the sugar until light and fluffy.

4. Add eggs and vanilla.

5. Gradually add dry ingredients into butter mixture, beating with electric mixer on low after each addition.

6. In a small bowl, whisk together the rest of the sugar and the cinnamon.

7. Roll dough into 1/2 inch balls and roll in cinnamon sugar until the dough is completely covered. Place on cookie sheet. Repeat until cookie dough is gone.

8. Bake cookies for 10-12 minutes, or until very lightly browned on the edges. Let cool for 2-4 minutes. Enjoy!!
