Devil's Food Cupcakes

We had some out-of-town relatives come over and I baked these cupcakes the day before not knowing that they were coming. My mom told me that they were coming and I said that we can use the cupcakes for the dessert along with the pies we made a few days ago. They were a huge hit!



Ingredients:
2 cups flour
2/4 cocoa powder
2 tsp. baking soda
1/2 tsp. salt
2/3 cup sugar
2/3 brown sugar
1 stick butter
2 eggs
2 tsp. vanilla extract
1 1/2 cup buttermilk*

Chocolate Frosting:
7 cups powdered sugar
2 cups cocoa powder
2 sticks butter
2 tsp. vanilla extract
2 cups heavy cream

How-to:
1. Preheat oven to 350˚. Line two muffin tins with cupcake liners.

2.In a bowl, whisk together flour, cocoa, baking powder and salt.

3. In a large bowl beat sugars and butter with an electric mixer on medium-high speed until fluffy

4. Add eggs and vanilla and beat until combined

5. Scrape sides of bowl.

6. Add half of flour mixture and mix at low-speed until combined.

7. Turn of mixer and add buttermilk and mix at low-speed until combined.

8. Add the rest of the flour mixture and mix at low-speed until combined.

9. Divide batter equally into prepared muffin tins.

10. Bake for 20-25 minutes. When done put cupcakes into refrigerator to cool.

11. For Chocolate Frosting, mix all ingredients and mix half way with rubber spatula and then mix with electric mixer at low-speed.

12. When cupcakes are done cooling (about 7 minutes)

13. Frost cupcakes, and decorate with sprinkles if desired.

14. Enjoy!

Buttermilk:
For 1 1/2 cups add 1 1/2 Tbsp. vinegar
